Steven's birthday was about a month ago, but we finally got around to having a little get-together with family last weekend. I always like to bring something a little different to these functions, so when I found this recipe for s'mores cookies, I knew I would be trying them pronto. The recipe included making chocolate chip cookie dough from scratch, but I didn't see the point of that, so I bought a tub of Toll House and it worked just fine! Here's what I did:
Refrigerated cookie dough (you could buy the kind pre-cut into squares if you want, but I thought the tub would be easier because I could use however much dough I needed to cover my graham cracker)
Hershey's bars (I only used one and a half, but buy extra because you'll be making these frequently)
Cookie sheet (make sure it has sides because the graham crackers can be quite slippery)
Break your graham crackers in half and line the bottom of your cookie sheet.
Using a large spoon, put a nice sized dollop of cookie dough on each graham cracker. Bake at 375 degrees for about 5 minutes, just until the dough is starting to get soft and the chocolate is melting. Then smoosh two mini marshmallows onto each cookie. You can't do this while the dough is fresh out of the fridge for obvious reasons, plus they would get burned before your cookies baked all the way through.
After your cookies are bedecked with marshmallows, put them back in the oven for 8-10 minutes, until the cookies are mostly done and the marshmallows are melted and slightly brown on the top (be sure to check every few minutes!!). Take them out, smoosh a Hershey's piece into each cookie and pop them back in the oven just until melted, but the Hershey's logo is still visible.
And there you have a delicious, EASY s'mores cookie.
The graham cracker gets slightly soggy, the edges of the cookie are crisp, the marshmallow is gooey, and the chocolate is soft. Can we get a collective YUM?!
I brought the leftovers to my kids at work and they were a big hit! Although one of the boys only ate half of his and I asked him if he didn't like it, and he said "I like it, but I'm just practicing my willpower." LOL I don't know where he heard that, but it was quite funny.
